To make natural cider, we use different kinds of apple: acid, bitter and sweet. Today we estimate that there are more than 1000 varieties of local apples for making cider in the Basque Country, although only around 25 of these are widely used in Gipuzkoa. The secret of good cider lies in achieving the perfect combination and the hand of each cider maker. The 14 varieties of apple recommended by the Provincial Council of Gipuzkoa and the Asociación de Sidrerías de Gipuzkoa are: Aritza, Errezila, Gezamina, Goikoetxe, Manttoni, Moko, Mozolua, Patzolua, Txakala, Udaremarrroi, Urdin, Urtebi haundi, Urtebi txiki and Frantzes Sagarra and Verde agria.
